摘要: Abstract An in vitro system for the breakdown of starch granules by mixtures α- and β-amylase is developed discussed with reference to information concerning degradation vivo. β-Amylase has no action on very little effect rate granule digestion α-amylase. It does, however, affect product distribution an α-amylase digest considered attack dextrin intermediates produced granules.
