摘要: SummaryThe activities of the cell-wall degrading enzymes polygalacturonase (PG) and cellulase two forms invertase were studied during ripening cherimoya fruit. All showed maxima coinciding with climacteric maximum in respiration beginning most pronounced rise ethylene production. The PG increased three-fold concomitantly highest drop flesh firmness. After reaching maxima, activity soluble was almost stabilized, while that bound form decreased to values similar those preclimacteric Since fructose glucose concentrations continuously it is suggested sucrose hydrolyzed mainly by invertase.
