摘要: To identify and examine the distribution of proteolytic inhibitory activity in crude extracts from fish eggs, to determine applicability these protease inhibitors as anti-degradation agents surimi-based products meat, we compared activities various eggs those commercial proteases, such trypsin papain. We used optimal conditions for screening activity: 30 ug/uL 0.1% 0.6 mM Na-benzoyl-L-arginine-p-nitroanilide (BAPNA) with a pH 8.0 at 40℃ 60 min. The papain four proteases were investigated after mixing 100 enzymes 0.3% casein performed assay detect (%) eight species against target revealed wide eggs. specific (11.6-28.6 U/mg) BAPNA substrate higher than that (0.64 egg whites, inhibitor. trypsin, whites (1.94-4.51 U/mg), (0.24-1.57 (0.04-0.32 U/mg). rich exhibited strong serine protease, papain, cysteine protease.
