摘要: The effects of whey protein isolate (WPI) films and coatings incorporating lysozyme (LZ) on the inhibition Listeria monocytogenes both in microbial media, as well cold-smoked salmon, were studied. antimicrobial LZ examined using various growth media by turbidity plate counting tests. Disc-covering disc-surface-spreading tests also used to evaluate WPI LZ. Smoked salmon was a model food test LZ, initially during storage at 4 10 degrees C for 35 days.
