Pulsed electric fields inactivation of attached and free-living Escherichia coli and Listeria innocua under several conditions.

摘要: The use of pulsed electric fields (PEF) is considered as a mild process in the inactivation microorganisms present liquid food products. PEF treatments Escherichia coli and Listeria innocua suspended milk phosphate buffer, with same pH conductivities, yielded to similar inactivation. Reduction rates obtained distilled water indicated that conductivity product main parameter bacterial Bacteria attached polystyrene beads were inactivated by at greater (E. coli) or equal rate (L. innocua) than free-living bacteria. Base on selective non-selective enumeration media, no clear indications for sublethal damage surviving treatment. E. cells subjected 60 pulses 41 kV/cm examined transmission scanning electron microscopy. Changes cytoplasm observed cell surface appeared rough. outer membranes partially destroyed allowing leaking cytoplasm.
