摘要: Aims:  To determine the effects of water activity (aW; 0·995–0·90), temperature (5, 18, 25 and 30°C), time incubation (7–35 days) their interactions on tenuazonic acid (TA) production 2% soybean-based agar by two Alternaria alternata strains isolated from soybean in Argentina. Methods Results:  TA isolates A. was examined under interacting conditions aW, agar. Maximum obtained for both at 0·98 but 30 25°C RC 21and 39, respectively. The toxin concentration varied considerably depending temperature, strain interactions. produced over range 5 to 30°C aW 0·92 0·995, however 18°C little below 0·94. Contour maps were developed these data identify areas where indicate a significant risk accumulation. Conclusions:  optimum marginal identified. results indicated that is favoured different temperatures strains. Significance Impact Study:  Data provide very useful information predicting possible factors contamination as used this study simulate those occurring during grain ripening. knowledge or sub-optimal growth are relevant improper storage accompanied elevated moisture content can favour further mycotoxin lead reduction quality.
