Influence of water activity and temperature on growth and mycotoxin production by Alternaria alternata on irradiated soya beans

摘要: The aim of this study was to determine the effects water activity (a(w)) (0.99-0.90), temperature (15, 25 and 30°C) their interactions on growth alternariol (AOH) monomethyl ether (AME) production by Alternaria alternata irradiated soya beans. Maximum rates were obtained at 0.980 a(w) 25°C. Minimum level for dependent temperature. Both strains able grow lowest assayed (0.90). amount AOH produced 0.98 but different temperatures, 15 25°C, RC 21 39 respectively. AME 30°C both strains. concentration range toxins varied considerably depending interactions. two metabolites over 0.99 0.96. limiting detectable mycotoxin is slightly greater than that growth. Two-dimensional profiles a(w)× developed from these data identify areas where conditions indicate a significant risk accumulation bean. Knowledge under marginal or sub-optimal can be important since improper storage accompanied elevated moisture content in grain favour further lead reduction quality. This could present hazard if used human consumption animal feedstuff.
