Characterization of polyphenols in mango puree concentrate by HPLC with diode array and mass spectrometric detection

摘要: Abstract Polyphenols from mango puree concentrate were characterized by HPLC with diode array and mass spectrometric detection. After extraction acetone, further fractionation of polyphenols ethyl acetate Sephadex LH-20 was necessary to obtain pure peaks. Five quercetin (Q) glycosides one kaempferol glycoside unambiguously identified. The predominant flavonol Q 3-galactoside (22.1 mg/kg fresh wt.), 3-glucoside (16 mg/kg), 3-arabinoside (5 mg/kg). Among the phenolic acids, gallic acid (6.9 Quantification C-glycoside mangiferin (4.4 mg/kg) also achieved method described. Using MS/MS, a gallotannin consisting glucose four units detected. Due presence both carotenoids polyphenols, mangos can be considered as an especially rich source antioxidants.
