Preparation of acylated sucrose derivatives

摘要: Sucrose derivatives partially acylated in each ring can be obtained by treating a fully or sucrose derivative with an enzyme having esterase activity capable of removing at least one acyl group from ring, generally comprising being component lipase, esterase, amylase, α-galactosidase protease preparation, the treatment effected aqueous system. Sucralose using this method to obtain 2,3,6,3',4'-penta ester which then chlorinated and de-esterfied. Some penta acetates, tetraacetates mixed acetates/butyrates are new compounds.
