摘要: The authors have recently developed a novel micromachined device for preparing monodisperse emulsions, referred to as straight-through microchannel (MC) plate, an array of uniformly sized through-holes fabricated on single-crystal Si plate by microelectromechanical systems (MEMS) fabrication technology. They report the process, and also investigate formation characteristics oil-in-water (O/W) emulsion droplets composed food-grade ingredients using oblong MC.
