摘要: This article reviews progress in the research of methyl mercury (MeHg) and nutrient interactions during past two decades. Special emphasis is placed on following three major areas: a) effects kinetics, b) toxicity, c) possible mechanisms. Dietary information not usually collected most epidemiologic studies examining MeHg exposure. However, inconsistency toxicity observed different populations commonly attributed to dietary modulation. Even though mechanisms interaction have been totally elucidated, nutritional toxicology has provided insights into understanding nutrients toxicity.
