摘要: Lactic acid and trisodium phosphate (TSP) were evaluated for the ability to reduce Escherichia coli aerobic plate counts (APCs) on lamb breasts that inoculated with a fecal paste. A 90-s water rinse was applied followed by either 9-s (55°C) 2% lactic spray, 60-s 12% TSP dip, or combined treatment of both treatments. reduced E. APCs 1.6 log 10 /cm 2 . caused 1.8-log reduction in coil 0.7-log APCs.
