Inactivation of Alicyclobacillus acidoterrestris spores in aqueous suspension and on apples by neutral electrolyzed water

摘要: Alicyclobacillus acidoterrestris can be difficult to control in fruit juices as their spores survive juice pasteurization temperatures and may subsequently germinate grow. Contaminated fruits regarded a major source of spoilage caused by A. juices. The objective this study was evaluate the efficacy neutral electrolyzed water (NEW) reducing number aqueous suspension on surface-inoculated apples. Its effectiveness compared with that sodium hypochlorite (SH) solutions at free chlorine concentrations 50 200mg/L. Viable spore counts test suspensions were significantly (P 0.05) reduce viable during same exposure period. More than 5 log reduction achieved NEW solution containing 200mg/L after min exposure. Exposure for 3 yielded more 4 reductions apple surfaces. At chlorine, three ten-fold effective SH viability This finding suggests considered an disinfectant fruits.
