摘要: Abstract Despite the high economic and safety impact of food adulteration, surveillance is limited by costs resources available to regulatory agencies. Infrared (IR) spectroscopy can provide rapid cost-effective tools for effective deter acts counterfeiting, or vandalism. Powerful pattern recognition techniques be used screen materials enable real-time field-based measurements controlling raw material stream. This chapter presents current state research on applications IR authentication high-value susceptible economically motivated tampering. In addition, we present Raman as a complementary vibrational technique with increasing relevance ingredient authenticity. We will review sensor technologies directed at improving efficiency, throughput, reliability, presenting examples recent cases adulteration that resulted in industry. Finally, portable devices are introduced future field applications.
