摘要: ABSTRACT The crystallization and melting enthalpy of virgin coconut oil adulterated with palm kernel (PKO) soybean (SBO) were studied by using differential scanning calorimetry. Virgin was spiked separately PKO SBO from 2% to 40% (w/w) adulterant oils. Fatty acids all oils determined complement the calorimetry data. The heating curve SBO-adulterated samples showed adulteration peak appearing at lower temperature region 10% level. Regression analyses stepwise multiple linear regression used predict percentage R2 0.9490. PKO-adulterated did not show any but demonstrated a gradual decrease in height major exothermic peak. PRACTICAL APPLICATIONS An alternative method for detection based on is presented. Application rapid, does require sample preparation involve use solvents or toxic chemicals.
