Carotenoid-protein complexes and their stability towards oxygen and radiation

摘要: Abstract Carotenoid-protein complexes isolated from fresh mangoes were found to be more stable oxygen and radiation when dissolved in water as compared with s-carotene petroleum ether. Part of the pigment could released complex by gamma irradiation. Observatons on stability carotenoid (98% s-carotene) indicated that is either associated lipid prosthetic group protein or loosely attached weak hydrophobic bonds.
