摘要: The effects of casein-coating on some properties Kashar cheese and its effectiveness in carrying natamycin to prevent mould growth were studied. Five groups prepared: no-coating (A), vacuum-wrapped (B), coated with casein (C), containing (D) dipped solution (E). While samples A C had significant after only one week, no visible was detected the surface sample D for about month. Sample E showed just three weeks ripening probably due presence non-treated areas surface. B throughout period. Sensory evaluation electrophoretic analyses differences among samples. These results show that can suppress month without any adverse quality.
