摘要: Abstract: Plants are the primary source of omega-3 polyunsaturated fatty acids (PUFA) in land and marine food chains provide basis to produce milk meat with enhanced nutritional attributes. This chapter describes range PUFA sources used animal feeding – including forages, oilseeds fish oils identifies factors controlling incorporation into meat. There is a particular focus on challenges increasing ruminant products as consequence rumen biohydrogenation, well limitations elongation/desaturation longer chain triacylglycerols. The also considers implications seeking modify for livestock health fertility, product quality attributes such flavour shelf-life.
