摘要: Abstract Several randomized controlled intervention trials have reported improvements in mood following the adoption of vegetarian diets. However, mechanisms contributing to this improvement not been investigated. Mood is regulated by action neurotransmitters serotonin and norepinephrine proinflammatory cytokines (e.g., IL-1β, TNF-α, IL-6, IL-2) eicosanoids PGE2). Vegetarian diets are inherently rich antioxidants, adherence associated with low oxidative stress PGE2 concentrations. Furthermore, high carbohydrate-to-protein ratio should facilitate tryptophan entry into brain production serotonin. This chapter explores aspects that would theoretically promote healthful states promoting neurotransmitter action.
