摘要: The purpose of the current work was to investigate capability multivariate curve resolution-alternating least squares (MCR-ALS) extract relevant information from Fourier transform near-infrared (FT-NIR) spectra acquired on-line with a fibre probe during milk lactic acid fermentation. fermentation trials were conducted replicating twice factorial design three different starter cultures (Streptococcus thermophilus and Lactobacillus bulgaricus alone or as 1:1 mixed culture) incubation temperatures (37, 41 45 °C), for total 18 experiments. runs monitored 7.5 h through pH measurement, dynamic oscillatory test rheological properties evaluation FT-NIR acquisition. obtained MCR-ALS models successfully described experimental recorded (99.9 % explained variance, 0.63665 % lack fit, standard deviation residuals lower than 0.0072). spectral profiles by pointed characteristic coagulation phases concentration defined function time each run strongly dependent on temperature tested, in agreement results. applied spectroscopy provides dairy industry control system which could be implemented in-line reliable management method monitoring processes define profile no matter operative conditions adopted process.
