摘要: Mycotoxin fusariotoxins, essentially represented by trichothecenes, zearalenone and fumonisins, are widely scattered in cereals their products. Human animals particularly concerned toxicity consecutive to oral chronic exposure. exposure can be direct via or indirect products of having eaten contaminated feed. As this alimentary risk is considered as a major problem public health, it thus great importance determine bioavailability, metabolic pathways distribution these mycotoxins animal human organism. Most studies indicate that fusariotoxins rapidly absorbed the small intestine but mechanisms involved remain unclear. Except NIV, partly metabolised into more hydrophilic molecules digestive tract liver. Fumonisins present different behaviour they seem very few slowly metabolised. The main part shows rapid elimination within 24 h after ingestion, followed slower excretion amounts. However, traces derivates found This manuscript, reviewing literature published on fusariotoxin transfer, highlights too little data available correctly appreciate transfer Further focusing needed before clarifying assessment for health.
