Effects of heating procedures on deoxynivalenol, nivalenol and zearalenone levels in naturally contaminated barley and wheat.

摘要: The influence of heating temperature and time on deoxynivalenol (DON), nivalenol (NIV) zearalenone (ZEA) contents in naturally co-contaminated barley wheat was investigated intending to establish the basis for a decontamination model Fusarium mycotoxins cereals. standard toxins whole powder samples were heated convection oven at 140, 160, 180, 200, or 220 degrees C, kernel subsamples (200 g each) roasted an experimental rotary gas-fired roaster 150, 180 C. All treatments resulted time-temperature-dependent decomposition toxins; logarithm toxin remaining % presented linear relationship with time. lines equations used estimate half (H) decimal (D) times (time required destroy 50 90% toxin, respectively). DON NIV H D similar 50% shorter standards than powder. ZEA values considerably longer, while comparable those NIV. At DON, 11, 10 85 min, respectively, obtained same three (25 min). determination constitutes understand stability nature each toxin.
