摘要: Abstract In this study, lactulose synthesis from whey lactose was investigated in batch and continuous systems using immobilized β-galactosidase. the system, optimal concentration of fructose for 20%, effect galactose, glucose on β-galactosidase activity determined hydrolysis transgalactosylation reaction synthesis.
