Selenium content in selected products of animal origin and estimation of the degree of cover daily Se requirement in Poland

摘要: The aim of the study was to determine Se concentration in selected products animal origin (dairy products, pork, beef, chicken, giblets, fish, eggs) and estimate degree which these cover daily requirement humans. Selenium concentrations were determined using spectrofluorometric method. Mean milk, yoghurt, kefir, probiotic drinks 0.020 μg mL -1 , 0.010 0.012 0.012μgmL respectively. cheese ranged 0.022- 0.088 g wet weight. average selenium content meat from 0.064 (beef) 0.094 (chicken) w.w. mean giblets (liver: 0.307-0.401 w.w.) significantly (P < 0.05) higher than meat. depends on fish species our it 0.136 ± 0.023 (flounder) 0.282 0.024 (mackerel). results obtained show that analysed food provides 22.8% requirement. Considering account for 40-45% diet intake averages 33-37 μg.
