Protein fractionation studies have shown that prolamine glutelin principal fractions. Increase Sorghum leads to an increase prolamin fraction decreases nutritional quality. Environmental factors such as location, chemical fertilizers, plant population treatments influence acid pattern. The presence tannins reduces digestibility
