摘要: The natural triacylglycerols are mixtures of glycerol esters containing one, two, or three different fatty acids per molecule. By means stereospecific analysis the mixed triacylglycerols, it has been possible to demonstrate that they made up largely asymmetrical enantiomeric molecules. isolation and identification individual acylglycerols from such have proved extremely difficult because large variety represented great similarity in physicochemical properties their esters. With modern chromatographic methods, separate identify on basis acid composition, but a resolution positional isomers enantiomers not achieved. Stereospecific chemical synthesis therefore remains only obtaining pure for physico-chemical metabolic studies.
