摘要: A number of studies have suggested that ancient wheats health benefits compared with modern bread wheat. However, the mechanisms are unclear and limited numbers genotypes been studied, a particular focus on Kamut® (Khorasan wheat). This is important because published analyses shown wide variation in composition between genotypes, further effects growth conditions. The present article therefore critically reviews comparisons wheats, relation to selection lines, including dietary interventions adverse (allergy, intolerance, sensitivity). It concluded urgently required, particularly from wider range research groups, but also wheat species. Furthermore, although most made efforts ensure comparability material terms conditions processing, it essential these standardised future this should perhaps be condition publication.
