摘要: Frozen leguminous food products and a method for preparing the same are disclosed. The process comprises steps of cleaning legumes, removing all unwanted material, tempering legumes until they partially but evenly hydrated, steam cooking in direct injected live steam, crushing between rolls, forming into nuggets, quick freezing resultant nuggets. nuggets generally cube shaped measure approximately 3/8 inch on side. They contain 50-65% solid product. disclosed eliminates possibility scorching during slow as is common prior art. also results finished product which, when reconstituted, has color aroma prepared from fresh legumes.
