摘要: Abstract Initially, cow's milk fat was digested at various temperatures with two levels of pancreatic lipase, but this unsuccessful in eliminating intermolecular specificity. Next, the fatty acid compositions monoglycerides (MG) from similar digestions were determined by gas-liquid chromatography as methyl and butyl esters. These found to vary extent hydrolysis, short-chain acids being present lesser proportions MG after extensive hydrolysis. The differing attributed preferential digestion certain triglyceride (TG) species nonrandom distribution 2 position among TG classes. Subsequently, confirmed when residual a fat-pancreatic lipase submitted second resulting compared those obtained initial lipolysis. During these studies, presence butyric (4:0) also observed. Therefore, possible acyl migration 2-position 4:0 investigated analysis free (FFA) mixture synthetic glyceryl-2-butyrate -1,3- dipalmitate triolein. As indicated some observed FFA, possibly occurred, evidence for inconclusive.It is concluded that intact triglycerides, quantitative calculations 1,3-random, 2-random type are not valid.
