Development of a bioactive packaging cellophane using Nisaplin® as biopreservative agent

摘要: Aims:  Production of a nisin-containing cellophane-based coating to be used in the packaging chopped meat. Methods and Results:  The adsorption nisin cellophane ‘P’ type surface was studied at 8, 25, 40 60°C using different concentrations nisin. Then, antimicrobial activity adsorbed determined fresh veal meat for effectiveness reducing total aerobic bacteria. higher 8°C. developed bioactive reduced significantly growth bacteria (by ca 1·5 log units) through 12 days storage 4°C. Conclusions:  Bioactive could controlling microbial meat. Significance Impact Study:  Nisin-adsorbed would result an extension shelf life under refrigeration temperatures.
