摘要: Abstract Statistically-based experimental designs were applied to optimize the fermentation for production of glucosyltransferase by Leuconostoc dextranicum NRRL B-1146. Eleven medium components examined their significance on enzyme using Plackett–Burman factorial design. Tween 80, sucrose and K 2 HPO 4 significantly improved process. The combined effect these nutrients glucansucrase studied a full-factorial central composite design, second-order polynomial was established identify relationship between output three components. optimal concentration variables maximum 80 (0.55%, v/v); (5.6%, w/v) (1%, w/v). activity predicted model 6.53 U/ml that in perfect agreement with actual value (6.40 U/ml).
