摘要: BACKGROUND Low protein digestibility and lysine content of white sorghum grain limit its use as a foodstuff. The increase in γ-kafirin cross-linking, has an important role the reduction digestibility. objective this study was to characterize gene 12 Mexican tannin-free genotypes relationship with content. RESULTS Two alleles were identified: 1 7. predicted amino acid sequence allele 7 showed seven point mutations; six silent, one missense (C235G), causing substitution P79A deduced sequence. In silico analysis that codified by five α-helixes without disulfide bonds, while coding four three bonds. Genotypes had higher than those 1, showing no differences kafirin electrophoretic profile, neither correlation nor vitro pepsin CONCLUSIONS two alleles, Allele associated content; could modify secondary structure. © 2015 Society Chemical Industry.
