摘要: Oxidative Stress (OS) produces the formation of free radicals and other reactive oxygen nitrogen species that are intimately involved in many diseases, especially Chronic Degenerative Diseases (CDD) such as cancer, diabetes, cardiovascular obesity, among others. Thus, compounds need to be quenched by antioxidants. The problems these include they susceptible degradation, have low bioavailability, can lose their bioactivity gastroIntestinal tract. Therefore, an alternative is encapsulation. Zein a protein used nanotechnology polymer matrix because it encapsulate different antioxidants provide stability control release. disadvantage zein delivery vehicle limited aggregation when suspended water, addition conditions acid pH or higher ionic strength tends destabilize. To reduce limitations, incorporation polysaccharides second nanoparticles. In this review, we discuss OS source CDD, role prevention preparation, characterization, application antioxidant-zein-polysaccharide particles systems well possible mechanisms CDD.
