摘要: The mineral composition of kefir produced from cow and goat milk was determined. macro (Ca, P, K, Na Mg) microminerals (Cu, Fe Zn) were determined both in samples. Ca/P ratio 1.32. Ca, Mg, Cu levels significantly higher than those milk; the K concentrations decreased (P<0.05) while there no change Zn levels. Mg increased (P<0.05). No changes recorded for milk. Kefir a better source minerals.
