摘要: The effect of drying conditions on the preservation chlorophyll pigments in mint and basil have been investigated order to determine effects temperature whether or not there was a prior blanching. Pigments extracted from fresh dried samples were analyzed by reversed phase high performance liquid chromatography coupled photodiode array detector; isocratic separation performed Zorbax ODS C18 column. purity chromatographic peaks chlorophylls breakdown products investigated. visible spectra standard pheophytins compared, using least squares normalization with those extracts basil. study has shown that better preserved when preceded short blanching; if blanched before drying, degradation b best prevented at low temperatures.
