摘要: Abstract This study on hydration kinetics of chickpea (Cicer arietinum) in water at different temperature was conducted to assess the adequacy models describe absorption phenomena during soaking. The diffusion coefficient values calculated using two forms Fick’s second law were all order 10−9 m2/s. Peleg, Weibull and Exponential fitted soaked sample data. Adequacy determined determination (R2), root mean square error (RMSE) chi-square (χ2). variation moisture content splits temperatures depicts an initial high rate primary phase followed by slower relaxation or secondary hydration. linearity curve stages showed uptake process controlled. results non-linear regression analysis fitting revealed that Peleg model described better than did other with R2 ⩾ 99.06%, RMSE ⩽ 2.95 χ2 ⩽ 0.001 for models. Temperature had a positive significant effect capacities endothermic process.
