摘要: A study was made of a β-fructosidase, which is produced extracellularly and intracellularly bySaccharomyces fragilis. The enzyme catalyzes the hydrolysis inulin, bacterial levans, sucrose, fructose portion raffinose, by splitting off terminal fructosyl units. It attacks β-2,1 as well β-2,6 linkages. content inulin-grown cells sufficient to allow fermentation inulin at same rate glucose. ratio rates with sucrose about 25 for β-fructosidase ofS. fragilis 14,000 invertase.S. does not contain significant amounts invertase it ferments raffinose aid related, but different enzyme, inulinase.
