摘要: Mould growth rates at 0, 3, 7, 10 and 15°C were measured by dry weight analysis of the mycelium as a function mycelial across surface an orange juice-based agar medium. Penicillium italicum produced significantly greater ( P ≤ 0·05) mass was capable faster than other test fungi most temperatures. Only P. Cladosporium cladosporioides grew 0° C. citrinum sensitive to refrigerated temperatures did not grow 7° C or below. After in juice 10° for 12 days, there slight reduction °Brix although pH total titratable acidity change. Invertase production digitatum caused sucrose levels accompanied concomitant increases glucose fructose. Results suggest preferential utilization Geotrichum fructose . Destruction cloud observed juices inoculated with penicillia but
