摘要: The objective of this study was to investigate the effect particle size sunflower head residues and extraction conditions on yield chemical quality pectin. Pectin extracted with sodium hexametaphosphate (SHMP) nitric acid solution. highest obtained for 60 mesh size, however larger sizes (about 2 mm) can be used in industry reason facilitate filtration process. factors pH time SHMP affected pectin strong statistical interacions among all three (pH, temperature time) existed only firmness jellies prepared at 2.4. Each temperature, had a yield, molecular mass gels. There were no differences moisture, ash galacturonic content between SHMP- acid-soluble higher degree methylation (43.7%) than SHMP-soluble (35.3%). soluble-pectin, despite its (15.3%), compared that (9%), relatively poor gelling quality.
