摘要: Introduction: Acid lactic bacteria have been studied for their ability to grow in harsh environments and generate antagonisms with other microorganisms. The present study sought determine the kinetic parameters of growth Lactobacillus lactis its effect on Escherichia coli, Salmonella typhimurium, Clostridium perfringens Staphylococcus aureus. Materials Methods: strain was evaluated at concentrations 0.5, 1 2% bile salts; 1.5% bile; three levels pH (2.5, 4.5 7) two temperatures (38 45oC). Susceptibility all strains Dicloxacillin, Cefepime, Cephalothin, Ciprofloxacin, Gentamicin Penicillin also using Kirby-Bauer technique. Inhibition L. supernatant E.coli, S. aureus C. following were determined estimated: growth, pH, sugar consumption, acidity protein consumption during fermentation MRS. Peptides through HPLC determined. Results: Growth 1.2x109 4.1x109 CFU/ml 1.2% 0.5% salt obtained; 1.1x1011, 2.1x1010 1.0x1010 2.5, 7 respectively; 1.7x1013 1.4x1013 45 38oC. showed resistance Cephalothin Dicloxacilin; perfringens, Dicloxacillin; typhimurium E. coli Cephalothin; aureus, Dicloxacillin. inhibited included Conclusion: It is concluded that adequate conditions vitro but not typhimurium.
