摘要: Abstract We investigated the fatty acid specificity of 1,3-positional specific Rhizopus delemar lipase in acidolysis using a randomly interesterified oil, which constituent contents were approximately same, as substrate. Acidolysis was carried out at 30°C with shaking reaction mixture containing caprylic (CA)/the oil (2 : 1, w/w) and immobilized on ceramic carrier (4% mixture).
