摘要: Passion fruit peel, a major by-product of the processing, was treated in subcritical water under nonisothermal conditions batch-type reactor containing dried peel and ratio 1:16 (w/w), with maximum temperatures range 100–245C. The effects treatment temperature time on composition obtained hydrolysates were combined expressed as severity factor (ln Ro). Both mono- oligosaccharides high degree polymerizations (DP > 7) extracted from every tested. at ln Ro 3.4 5.1, corresponding to heating 150C within 4.5 min 175C 5.5 min, respectively, yielded highest amount (ca. 21%) galacturonan main component 65%), indicating that pectin predominantly hydrolyzed these conditions. study showed is an effective method for producing which may be useful dietary fiber. Practical Applications Pectic oligosaccharide soluble fiber can by hydrolysis pectin. This classified prebiotic possesses several health-promoting functions. Utilizing passion produce pectic alternative use increasing value this bioresource.
