摘要: Publisher Summary This chapter presents the evidence relating milk fat and dairy food consumption to risk of chronic diseases, especially coronary heart disease (CHD) cancer. It also provides a perspective on health implications in balanced varied diets. The discusses composition dietary fats; effects fats CHD (with emphasis fat); (especially fat) cancer risk; overall impact mixed-fat diet. guidelines must be translated into choices practical for consumers. Because many foods are perceived as high because is rich saturated fatty acids (SFAs), standard (i.e., not low or fat-modified) targeted by nutritionists elimination from diet meet stated chapter.
