Nutritive evaluation of the Bambara groundnut Ci12 landrace [Vigna subterranea (L.) Verdc. (Fabaceae)] produced in Côte d’Ivoire

摘要: The nutritional evaluation of the Bambara groundnut Ci12 landrace (Vigna subterranea (L.) Verdc.) seeds produced in Cote d'Ivoire shows a 19% content protein, containing all essential amino acids with tryptophan as limiting acid, total dietary fiber level 10%, low soluble fraction content, and fat 1.4%, high proportion unsaturated fatty (61%) which 36% were n-6 acids. This legume contains phosphorus, major mineral, followed by magnesium calcium, trace elements (iron, copper zinc). It is characterized same amount α-tocopherol antioxidant capacity common legumes. concentration acids, minerals, mainly Fe, indicates that this local has potentiality to improve status it could be regarded nutrient dense food.
