摘要: AbstractHuman milk is a highly valuable food for newborns and infants. Its protein fraction plays an important role the development of newborn. In present study, in vitro digestive model, developed resembling closely system infant, was applied to human order identify characterize peptide profile. The profile obtained after digestion analyzed by μLC-LTQ-Orbitrap-MS. A total 149 peptides from β-casein, 30 α-lactalbumin, 26 αs1-casein, 24 κ-casein, 28 osteopontin, 29 lactoferrin recovered. identified partially hydrolyzed proteins, such as caseins, different that previously reported demonstrating performance neonatal with respect other applied. These results would be useful starting point investigate physiological function breast mil...
