摘要: Processing and fermentation of Jerusalem artichoke (Helianthus tuberosus L.) tuber pulp mashes were successfully carried out at pilot scales 60 gallons 1000 gallons. Whole tubers pulped mechanically into a thick mash fermented, using commercially available Saccharomyces cerevisiae selected strains Kluyveromyces fragilis. EtOH yields ranging from 50-70% theoretical maximum obtained in 3-4 days. Several problems regarding the processing direct are discussed.
