摘要: This review article deals with the microbial synthesis, physiochemical properties, and potential applications of poly-epsilon-lysine (epsilon-PL), which is a naturally occurring biomaterial that water soluble, biodegradable, edible non-toxic toward humans environment. The epsilon-PL as food preservatives, emulsifying agent, dietary biodegradable fibers, highly absorbable hydrogels, drug carriers, anticancer agent enhancer, biochip coatings in fields food, medicine, agriculture electronics are also discussed this review.
