摘要: Summary The ability of aerobic and anaerobic spores, after various degrees heating, to produce macrocolonies in media containing different concentrations sodium chloride, potassium nitrate nitrite has been examined. The effect heat treatments, roughly from F0= 0.0015 1.5, on the inhibitory levels these curing ingredients, showed that more severe treatments were capable rendering surviving spores considerably sensitive subsequent inhibition by order found cured meats. To this effect, less heating was needed with two Bacillus strains than three Clostridium. Sodium chloride had quantitatively similar effects. increased ten-fold pH 7 6.
