Descriptive Study of the Different Tools Used to Evaluate the Adherence to a Gluten-Free Diet in Celiac Disease Patients

摘要: Celiac disease (CD) is a genetically conditioned autoimmune process that appears in susceptible people. It can affect people of any age, and slightly predominates females. has fairly homogenous global distribution, with an average prevalence 1–2%, the frequency having increased recent decades. The only effective treatment strict permanent gluten-free diet (GFD), although level compliance poor, at about 50% cases. To monitor effectiveness GFD, several procedures involving various approaches are employed: (a) Periodic visits by expert Nutritionists; (b) Clinical follow-up; (c) Serological time controls specific antibodies; (d) Serial endoscopies collection duodenal biopsies; (e) Use structured questionnaires; (f) Determination gluten peptides derived from faeces and/or urine. All these useful when applied, alone or combination, depending on Some patients will need to consult their doctors, while others require multidisciplinary approach assess GFD. In children, normalization mucosa was achieved 95% cases within two years, it more delayed adults, whose take longer (3–5 years) heal completely.
