摘要: A process for making fried taco shells. Disc tortillas are formed from a sheet of ground corn masa dough, and the disc passed laterally through heated baking oven on moving open web support means in successive, appreciably longitudinally spaced transverse rows, each such row including plurality tortillas. The baked transferred aforesaid arrangement an elongated steam chamber exposed to low pressure time period about few seconds minutes. exposure effects tempering moisture equilibration tempered into deep fat frying apparatus.
